Dungeons & Raids achievements are awarded for killing bosses in dungeon and raid instances.
Most of the Classic and Burning Crusade achievements can be awarded retroactively if players completed quests that had an objective of killing the final boss of the instance, either explicitly like "Kill Thaurassian but don't kill the Princess" or implicitly like "Loot the power core from Archaedas". Raid boss achievements for 25 and 40-person raids have an additional option of checking for BoP loot from the last boss of the instance in the player's bags or bank.
Note that not all end-bosses have quests for killing them, so it is still necessary to have completed instances like Blackfathom Deeps after the achievement system was enabled to get that achievement.
