Stormwind Gryphons are dead gryphons from Stormwind City during 
[10-45] The Battle for Broken Shore. They are presumably the mounts of the Stormwind Gryphon Riders accompanying the third fleet to the Broken Shore.
More Stormwind Gryphons appeared in Westfall, being injured by demons during the Legion Invasions. They could be rescued by the Alliance and Horde adventurers.
